I like to hold the option key when clicking around preferences, since it often reveals hidden settings. Fun in the menu bar as well.

In Lion, Apple allows you to customize which preferences (not just third-party, all of them) will be displayed. E.G. if you have a trackpad and not a mouse, you can hide the trackpad by holding down show all, pressing customize, and uncheck the box that makes it displayed. Press done and it will be hidden. It can be found by the search area in system preferences.
