How can I get my Photoshop to open a file again when I double-click on an image?

Somehow, this exact problem resurfaces every six months, as annoying as ever. Here's what's going on: When you installed Photoshop, the installer stashed a script (Adobe Unit Types) in your /Library/Scripting Additions folder, but now Photoshop can't find that script and thus ignores your double-clicking and dragging. The usual reason for this script disappearing is that you reinstalled Mac OS X, which removes the Scripting Additions folder and anything it contains. If you installed OS X using the Archive And Install option, you'll find the file in /Previous System/Library/Scripting Additions - just drag the whole folder into your new /Library folder. Otherwise you'll have to remove and reinstall Photoshop to restore the Adobe Unit Types script and your double-clicking satisfaction.
