
One man’s convenience is another’s annoyance—quash it in Image Capture’s preferences.
Mac OS X and iApps like iPhoto are generally so intertwined that the solution to your problem seems archaic, but it’s simple nonetheless. Open Image Capture (/Applications) and select Image Capture > Preferences. Under the General tab, use the pull-down menu to choose a different application (or none at all if you prefer fishing files off your camera as a disk volume) to launch when you attach a digital camera.

I believe Image Capture is stored in the Utilities folder, which you'll find in the Applications folder.

A fast way to find it is do a search for "image capture", the finder will bring up the app for you. Then follow said instructions.

Worked great for me. Sort of silly you can't tell iPhoto to only extract photos when you launch the application instead of when you connect the camera.

Eureka! This small problem has been giving me minor headaches for much too long now. Henceforth I shall be able to select my photos in the relative calm of Preview before I, & I alone, decree the pictures are worthy to serve up to the Great iPhoto! Ureshii!
