Sync WoW Laptop & Desktop
Looking for any info on keeping my laptop and desktop installs of WoW sync'd. e.g my UI, addons, macros etc.
Is it as simple as keeping my WoW Folder under my applications sync'd ?
If so, which folders do I need to concern myself with?

You'd probably mostly need to keep your interface and wtf folder synced. Patches should be faster for updating the client (so you don't need to sync the whole thing).

Your WTF Folder houses your interface settings, so if you have a custom ui, and you just spent 3 hours setting it up, thats where the settings are stored. WBD Is your WoW cache, and just allows you to load certain things faster, by having the stuff in cache already but isn't required to keep ui's the same across two machines.
For me, between both of my computers (PC and my Powerbook) I make sure to copy the WTF folder, and my Addons folder from one machine to the other, and that does the trick for keeping the ui the same across both machines. Hope that helps.
