Setting up MacMini as a mail server, sort of...
I'm interested in setting up something resembling a mail server, but I am new to this level of tech-geekyness. I'm not sure where to post this, so I thought I'd start here. If anyone knows a btter place to ask this, please let me know!
I am a long-time Mac user (we had a pre-release Mac in Dec of 1983, so I guess you can say I'm Mac since '83!), and have always enjoyed the ease of use of my Macs, of which I've owned seven; 128k Mac, 512k Mac, Quadra 650, Blue & White G3, iBook G3 (500 MHz), PowerBook G4 (1.5 GHz), MacBook (2.16 GHz). Through the years though, I have never needed to delve into the more technical aspects of email and the Internet, until now...
I am interested in purchasing an iPhone (when the 3G model becomes available) as having regular access to my email would be a great asset to my business, and bringing my MacBook is not always an option. I have four separate email account, each used daily. One of these accounts (my primary business account) is a HEAVILY spammed account and I use SpamSieve to filter out the spam, and it works great.
The problem there appears to be at the moment is if I had an iPhone, I could use it to check the various accounts, but I would have to manually filter the spam, and at 100-200 spam messages a day, that's not an appealing option.
What I would love is to purchase a MacMini to receive and filter all of my email, and then allow me to check the filtered email (sitting now on the MacMini) through my iPhone. Is this even possible? It seems easy enough to explain, but the realities of setting this up are well beyond me. I've searched the 'net, but can't quite find someone doing what I am describing.
Any help would be appreciated!

So the mail client on the iPhone doesn't have spam filtering like Apple Mail on OS X does? Lame.

Nope, no spam filtering... And I find the spam filter on Mail.app to not quite be powerful enough (or accurate enough) to deal with the volume of spam I get through my main account, which is why I use SpamSieve...
Basically, I want my (as-yet-not-purchased) iPhone to be able to check my global inbox on my Mac. This way I'd see all four of my email accounts, and they'd be properly filtered. I just can't think of a way to do this! I'm a musician, not a network technician!
I'd like for all the email to be handled by a separate Mac so I could check it using either an iPhone or my MacBook, depending on what was available to me at the time.... Hmmm...

After doing a lot more reading, I decided to set up a IMAP Gmail account and have all my other emails forward directly to that. The Gmail spam filter so far is doing all right, though it'll need more training (several false positives).
This seems to answer most of my issues, though now I need to figure out how to have Mail.app let me send/reply to email as someone other than my Gmail account (you can do this through Gmail online). Hmmm... But I'm getting closer! Now I just need that 3G iPhone to be released!
