OS 9
This is pretty random, but I miss Mac OS 9 and earlier, things just seemed simpler.
I was using my original iBook the other day (I actually think it had some version of OS 8 on it) and it was amazing how fast AppleWorks loaded, much quicker than Pages does on my MBP.

The OS X eye candy slows things down ridiculously. As far as applications go - Photoshop 7 runs the same speed in 9 and X (on my older hardware) if that is any consolation.

Photoshop 7 and 9.2.1. Fantastic! I loved that. Wacom tablet dialed in an everything.
Now I'm running 10.5.2 and CS3. Wacom drivers- no more.
Next purchase- Wacom tablet. A nice one.

OS 10 > 9. Mind you, I never really had a computer that ran it so my opinion is probably biased.

OS 9 was like a luxury sedan -- a lot of attention to detail, even though the underlying technology is not really all that impressive. OS X is more like a muscle car. The technology is much better, but the detail has largely been ignored.

I still use OS 9 on a day to day basis, mainly because Jag runs horribly on my wallstreet. there are somethings i still like about OS 9 mainly the speed factor but im sure if i was running a G4 500 in my wallstreet i'd be using that over OS 9 since lets face it.. Web Browsing sucks in 9

On a Wallstreet? I don't think so - I know you need XPF for a Tiger Install on a WS though.

The wallstreet only will take up to 10.2.8 as maximum OS without xpf

If you don't have the RAM maxed on your wallstreet, it is well worth it to do so. Jaguar became much more usable on my wallstreet when I did so.

I have a PB5300 with a 100MHz 603 that has no cache. It's performance is middling. I couldn't imagine the non-speed of a cacheless G3.

You can't make that comparison. The 5300 is a NuBus machine with an anaemic bus. The CPU is hampered by more than the lack of cache in that machine.

The cacheless G3 was "only" as "slow" as the 3400c/240.

I just bought a used 15 inch Cintiq LCD tablet. It apparently has drivers for both 9 and X, though I only use it with my MacBook.
I do wish the screen had a higher contrast ratio (200:1 sucks really hard), but it's still one of the most impressive and fun legacy devices I've ever used (legacy, as in you can still connect via serial if you want without an adapter).
It's just a digitizer with an lcd screen and protective layer on top, so I may swap the screen with a newer one.
