If you're new to IRC and are running OS X, you may want to try MAFirc.app.  It's just a simple program that will connect you directly to #MAFirc and help to get you started.

Minerva is available for MacOS X
Snak is one of the more powerful shareware options that is available in MacOS 9 and X
Ircle is another powerful shareware application that is available in MacOS 9 and X
Conversation is available for MacOS X
xChat Aqua that is available on MacOS X
ShadowIRC that is available on MacOS 9 and X
Colloquy has one of the better interfaces but sacrifices IRC commands and other features
