If you like Neverwinter Nights, definitely try Shadows of Undrentide, the expansion, at least to fulfill your RPG needs. For more information, read this post.
For RTS/Strategy, it doesn't get any better than Blizzard's Warcraft III and Frozen Throne expansion. For all the content that Frozen Throne adds, it's definitly worth it to buy both, possibly in the Battle Chest, which is a great deal.
To throw in some genre-bending games as well, which you may also enjoy, try Ambrosia Software's Uplink or Escape Velocity: Nova. Both are excellent, addictive, and relatively inexpensive.

I have friends who would die over getting to play Fallout... you can grab Fallout 2 (runs in os x, unlike the first one <on second look, it appears that the original also runs in os X>) from Macplay. Look into some other DND games, such as Icewind Dale (fun, but admittedly very linear, at least in terms of what you play, not necessarily plot), and also Baldur's Gate II, although I have no personal experience with that one, just the original. Majesty was surprisingly fun, mainly due to its unique approach to RTS.
If you've never tried, dl a copy of Escape Velocity Nova- Fun stuff there, plus, if you register, you can play the conversions of the original Escape velocity, and its sequel, EV: Override.
I'm hoping you've heard of Warcraft / Starcraft / Diablo from Blizzard, as those are very good games/series.
Bungie stuff- have to recommend Myth II, by Bungie, to you. You might look at Myth III if you like Myth II a lot. Also from Bungie was Oni (fun!), the Marathon Series (doubleplus fun!), and, in the near future, Halo as well (words fail...). Note, Marathon, Oni, and Halo are all FPS of sorts, but I recommend them anyway, as they were rather good. Also, since Marathon is rather outdated by now, you might look at some community projects- Marathon Resurrection (Unreal Tournament based) and Aleph One (opensource engine rewrite based off the source code Bungie released)
Back to macplay- what I've play of Aliens vs Predator, it is likewise a very fun game, at least as Alien- but is also a FPS. Same applies to Giants which I understand is amusing in a British sense of humor sort of way.
If you've never played Dues Ex, you might give the demo a try- this games rates very highly among people I know, among others. I believe it is a fairly deep game, so might be worth playing anyway- its also a FPS.
Hopefully you can find something in there that interests you- sor if I over explained things, but you didn't really give much clue as to how knowledgeable you are about Mac games.

Many mentioned here, but I'll be the first to recommend Civilization III - a very detailed game, and highly addictive. Almost all the other games I play are FPS, but Civ III is a goody

Be wary of games which require you to carry multiple CD's around. Baldur's Gate, Riven in my "case."
Sorry to rain on someone's parade, but Civ III did not thrill me.
I'm looking forward to Ghost Recon if I can find a free year.

Sorry to rain on someone's parade, but Civ III did not thrill me.
I can see Civ III not being everyone's cup of tea - it's addictive, mostly because of its detail and need for deep involvement to get the most out of the game - it's not addictive because off non-stop action or thrilling scenarios, that's for sure. I think it's a love-it-or-hate-it kind of thing - keep in mind there are millions who love it.
I too am looking forward to Ghost Recon. The funny thing is I own it, have it installed, but I've never launched it - I'm still working my way through a backlog of games.

If I had to pick 2 games they would be Photoshop and Illustrator. I'm so smurfing addicted to those games I can just sit in front of them and play for hours. It's awesome.

I highly recommend Deus Ex. It's awesome because you can play it how you want: sneaking around and sniping, or going at it guns blazing. You get "upgrades" for your cyborg body along the way, giving you new abilities (like being invisible to people, rocket repellant, faster healing, etc.) You also develop new skills, like hacking, lockpicking and use of heavy weapons.
It also has a deeply compelling plot, with twists and turns and all that good stuff. Try the demo! Watch the trailer for Deus Ex 2!
I also recommend Fallout 2 if you want something that's less FPS. One hint: learn to steal! You get the best guns that way. ;-)

I'd definately recommend Giants. Made by Planet Moon Studios, which is based in the UK, which means dirty british humor. Its classified as a FPS, but its much more than a FPS. The beautiful visuals generated by the terrain engine are worth it alone.
I also heartily recommend Deus Ex. This one is nearly always classified as a FPS RPG. There are skill gaining aspects, and as Jeff-o said, you can play it anyway you want. The most challenging (but fun way) is to play the game on the 'Realistic' difficulty level, and play it to finish WITHOUT KILLING ANYONE. Tranquilizer darts become your best friend.
Men/Women in Black don't count, because they blow up if you tranq them anyway.

I still play Civ2 more than 3 because I love it so much more. Civ3 annoyed the smurf out of me all the time but Civ2 was the best.

In case anyone wants Civ2, keep your eye out for a bundle including Civ2 and Unreal Tournament - I saw it in Vancouver for 25 bucks Canadian, which is, you know, $3.50.
Waitaminute - with the US dollar tanking hard, that joke doesn't hold water any longer - damn...
Anyways, that bundle is out there - sounds like a good deal.

If you must have one FPS (and we all should have at least one), I recommend Medal of Honor. You get to play a World War 2 GI and mow down nazis with your tommy gun, just like the old war movies.
And non-FPS games? I can only recommend ones I've played, and I haven't played them all. Recent ones I've liked were: Tropico, Pocket Tanks, and something called googol-Choo-Choo which isn't really a game, it's a virtual model railroad, with some neat features.
