Wild, I do feel for you, but I don't think going to Windows and a cheap Dell is going to make things better. Windows will probably infuriate you even more and make you tear your hair out.
Installing drivers, patches..viruses galore, more bloatware than you can shake a stick at, Internet Exploder, etc etc.
I wouldn't say it's worth it

I think the main difference is that in the demo, the Mac wasn't controlling a synth...it was controlling its own software-based instruments, which is voraciously processor intensive. It's one thing to conduct (MIDI); it's quite another to conduct AND be the orchestra (MIDI controlling software-based instruments from within the same Mac).
Hell, I used to sequence using my Commodore 64...but I had 2 synths and a drum machine to handle the noise part.

600MHz G3 or faster required for GarageBand
As for quality, it's quite apparent that Apple has gone downhill considerably. They are having to cut costs (and corners) to be even remotely competitive.
Since I have no use for most iApps, I'm seriously considering a Linux box for my basic needs. Will likely still keep the iMac handy however…

Leaving Apple won't be that hard... But don't rush off and get a Dell, you can get an 800 Mhz FSB 64 bit Athlon rated at 3200 with the ATI Mobility Radeon 9600 (M10P 64MB) graphics core for less than a 1Ghz Powerbook. 3 times the power, better resolution, 64 bit compatability, speed to burn..

And for the last time I will say I have used my G3 for REALTIME playback and recording for at least 6 months using nothing more than my guitar and an external USB sound card which had nothing to do with rendering. I used to play a recorded track and plug in my guitar to the sound card (which allowed me to go from 1/4 inch to USB) and play and record along with it. Same as the demonstration. My band mate used to plug in his midi keyboard and do the same thing. No extra expensive equipment nor G4 required, just a $59 sound card, bought second hand.
real time software instruments or realtime aiff playback/recording. guess which one is more cpu intensive? i was under the impression software instruments could be changed (pitch, etc) through rendering an algorithm in real time. its more than just a sound loop.
i'll stop stuffing my foot in my mouth now

Wait, I'm confused, 2 synths and a drum machine = G4?
I don't think so. Even if you're not loading samples into a wavetable, generating sound is not processor intensive. Synths have been doing it for 30 years now with fair success. I've heard synths (like the Korg trinity) doing the same silly string attacks that garageband did.
