Not "should"...*DID*! It'd be nice if Aspyr could work around the issue with a patch, but perhaps it'll be fixed with 10.3.9. Until either happens, I'm pretty much stuck.

DANTOOINE is driving me mad!
I'm playing KOTOR on my PB G4, 1.5GHz, 1GB Ram, ATI Radeon Mobility 9700 64MB Ram, OS X 10.3.8
I had my graphic settings to something between "low" and "mid" and everything was wonderfull until today. I never had any problems on Taris or wherever, but Dantooine and especially MATALE Grounds are unplayable. characters freeze, jump around, end up on an other part of the map...!
strange: fighting scenes are defenitly better! even with several opponents. moving around just with my 2 mates is impossible though... hmm?
While in the Crystal Cave, everything is normal, coming out to the open again -> same sh**t again
I tried to play around with graphic settings, but no visible effect to me.
any ideas on what to do or try?

Downgrade to 10.3.7 - that'll definitely fix it.
Otherwise, I've heard that disabling grass will also help quite a bit under 10.3.8.

Downgrading to 10.3.7 is not really an option, or is it?
And I have grass and shadows disabled, of course.
So anything else? Is that something that someone is investigating and trying to fix? Or is it just bad luck...

It's bad luck that 10.3.8 blew KOTOR away, sure.
However, when 10.3.9 comes out I'll dig into it - I'm hoping the performance regression goes away automatically.

How to get though Matale grounds:
I've done this three times, so I've gotten pretty good at it: First off, the problem is most severe around the Matale household itself. Approaching from the west across the bridge is nearly impossible. You should approach from the North, from the passage near the Temple Ruins where you find the first Star Map.
Once you enter the map, move each character only a short distance. It is actually helpful if krath hounds are present because you will pause by default. As long as the character stops their running stance when you stop pressing a movement key, you're OK. As soon as they freeze into running stance, IMMEDIATELY switch to another character. It may take a few seconds for input response to return, but the next character will have normal movement. Keep switching characters, moving a little at a time.
You have to work your way around the back of the Matale house, stay away from the bridge. Loop around until you can get the droid in front of the house within target-action range. Don't try to maneuver close--it's impossible, characters won't move in the direction you'r facing. Often they'll run backwards. Just click on the droid as soon as the reticle appears on it. Get the quest and leave. You never have to come back here.

@ Metacell: I left Dantooine without finishing every Quest. It's ok for me now, but I would like to complete it some day.
btw: I was REALY laughing when I was at Tatooine and the Sandpeople took me and Bastilla captive. They took our clothes away and I saw my Jedi-friend in her underwear! Cute! I immediatly switched to high resolution of course.

KOTOR is soo sweet on my PC. I got all the effects running and full shader 2.0 goodness. But it is still not as fast as you would think. On my 1.64Ghz PC there is still lots of slowdown in the same areas where it slows down on Mac.

No, it's fact. Check your box- altho obviously not true of the Xbox version, which has framerate issues, KOTOR on PC uses OpenGL.

I was running KOTOR on my iBook (12" 1GHz 768MB Radeon 9200M 32MB) under 10.3.8. Dantooine sucked. Brad suggested downgrading to 10.3.7 and that improved performance dramatically. I can now use grass and shadows on dantooine and the game runs smoothly.
I followed the instructions found here to downgrade:

After the Downgrade some things ran fine (like Kotor) other required a reinstall (like my webcam drivers). Just make sure that you use the "Archive and Install" option and that you tell the install to KEEP old users and network preferences.
Disclaimer: Downgrading worked for me and my machine. Your mileage may vary.
