giants and graphical features
I have the Giants demo and I have a GeForce 4Ti... but the features like bump-mapping and enhanced water effects are still unavailable

And they always will be, sorry to say. The GL code for those features didn't even exist in OS X when the game was released, so it was left out, but was supposed to be put back in, pending an update to OpenGL from Apple.
Well, we just got all the features necessary in 10.2, and Giants has been moved to MacPlay's value series, and as such is not exactly on a high priority level.
To make matters worse, most of the code for the game would have to be rewritten and the game recompiled to make the advanced features actually work. As I once heard from the mouths of OmniGroup via Matt Loria, MacPlay's support guy, because of the extensive rewrite and recompile, a simple "patch" couldn't actually be released for it, and it would have to be distributed as a full installer with all the data files. Of course, they couldn't press and distribute free copies to everyone with Giants already, and from a business standpoint, would have to recoup the additional development and publishing costs (on a nearly two year old game, no less), so they'd have to re-release it as a full retail package. Meaning those of us who already own Giants would have to buy the game all over again.
Personally, I wouldn't be against that, and would buy it if MacPlay and Omni went to such great lengths to support the game's additional features, but I'm sure they're too busy (and too wise) to concentrate such time, effort, and money on an old game.

hmm. in that case, anything i can do to flex my new graphics card's muscles? any good game demos?

Try Tenebrae Quake. It's a patch for Quake 1 that uses cool things like bump-mapping, per-pixel lighting, stencil shadows, etc. You can download the OS X version at http://fruitz-of-dojo.de
I don't think there's anything else out there which really supports advanced features.

I'm downloading it now. I wish there was an application out that took advantage of real-time shadows, something that the GF3 was able to do. Ghost Recon has directional stencil shadows, but it's still not full RTS. As far as I know, Splinter Cell is the only game out right now that has fully integrated real time shadows?
and Doom III in due time, of course.
