The best way, though it costs money, is with CodeWeavers' Crossover. It's a specialized, and thus easy-to-setup and working, version of Wine which allows you to use Windows plugins, including Quicktime. I used the demo for a while, pretty good stuff! As soon as I get some cash, I'm going to buy the real version. CodeWeavers contributes very heavily to the Wine project, so the money's going to good places.
