There are many parts of Britain that I haven't seen yet: Cornwall, Wales, the Highlands and islands of Scotland, East Anglia. I may yet do this later this year.
I'm a history fiend so crawling all over castles and cathedrals and other historical sites is what I do mostly.

I mainly eat and drink while I'm on holiday, though I've been trying to get into the other aspects of it.

I'm going on a cruise in the Baltic with my parents as well as my brother's family in August. Not big on cruises per se but it's free and it's a family reunion. Copenhagen, Oslo, Stockholm, Helsinki, St. Petersburg, and I think Estonia. I've been to a couple of those places before though. Being a cruise I'll see more water than anything though!

I'm taking an Alaska cruise in August with my grandmother, and we're also spending 4 days in the Canadian rockies. The biggest disappointment is that she's not fit enough to do any actual exploring of wilderness areas (or any area) with me and she won't let me go off by myself. 
I'd like to see Machu Pichu. I'd like to return to Spain and walk the Camino de Santiago pilgrimage. I'd like to buy a Eurail pass and be a backpacker in Europe for a month (probably will do this after I pick up either German or French). I'd like to visit Moscow and travel all over the UK.
And many more.

A DAY! Two in St. Petersburg. The whole cruise is 10 days. I think I'm missing a city though -- we're docking somewhere in Poland. We added on a couple of days at the beginning to see Copenhagen before boarding the ship.

I'm going to Berlin to see Jack Johnson next week.
Prague for Mars Volta in June.
A long weekend on a nice farm in Slovenia in July.
Long weekend in Rome in August.
And 2 trips to Canada (Sept, Dec). Damn those tickets are expensive though! There goes all my money till January.
I like short trips a lot. I like to try to base them around an event/concert or something.

First on my list is Australia. I read somewhere that Oz has 6 of the world's 10 most beautiful beaches, so I'd visit one of those. Naturally I'd also take in some sun, eat lots of food, and walk around town if it's worthwhile.
Second trip would be to England, to see all the historic sites. I'd want to see Stonehenge most of all. My sister went on an EF tour of England and they saw a LOT of stuff, I'd want to do something similar.
Next, maybe a small coastal village in Spain. Sun, food and culture is what I'm after.
I also want to climb the pyramids in Mexico, take a guided tour of Japan, and then visit Disney World again. Eh, maybe Disney will have to wait until I have kids over the age of 7.
I suppose that someday I'll take a cruise as well, dunno if I want to do the islands or Alaska...
BTW, those R. Crusoe vacations/excursions look FANTASTIC. If only I could afford one.

I was there 4 years ago. It's an amazing place but don't think you'll be beating the crowds there if you go now. It was packed with tourists then, probably even more so now. (There's a 5 Star Sofitel about 1km from the entrance to Angkor Wat).
But still amazing and worth every penny/bit of effort.

I was planing on taking a trip with the family and a friend or two to Florida, but the mouth-breathing sow (and only other licensed pharmacist at the hospital) that my father has the joy of working with got herself pregnant, again, and now will be on medical leave when we had scheduled to be on vacation.
