The lag is only really noticeable when things like that happen. Most of the time the game is good at predicting where the kart will end up since it knows the players want to drive in one direction around the course and stay on the track. Plus many of the items in the game automatically aim at the player for you, removing the need for compensating for the lag.
To answer your question from before, I didn't fall off the track in Sky Garden. I fell off once in Yoshi Circuit when you knocked me off with a red shell, then again in DK Pass by accident.
